Hierbas Liqueur Cream Delight with Quely Pick One!



For the cream

Mix together the milk, cream, and sugar.

Put the mixture in a saucepan and heat.

When it comes to the boil, stir in the egg yolks (the yolks must be well beaten), being sure not to stop beating the mixture with the hand blender.

When its temperature reaches 82º C, lower the heat, add the hierbas secas liqueur and the gelatine, which has been soaking in water.

Mix thoroughly and pour the cream into small glasses.

Leave them to cool and set aside in the fridge.

For the jelly

Heat the palo liqueur, remove from the heat, and add the sugar, hierbas secas liqueur and the gelatine, which has been soaking in water.

Mix this all together thoroughly, leave it to cool and add to the glasses with the cream. Return them to the fridge.

Assembly of the dessert

Place two Pick One! biscuits in the glasses with the cream delight and palo jelly and decorate with sprigs of peppermint.

For the cream

  • 125 ml. milk
  • 125 ml. cream
  • 50 g. egg yolk
  • 65 g. sugar
  • 1 sheet of gelatine
  • 5 ml. hierbas secas liqueur

For the jelly

  • 6 g. sugar
  • 37 ml. palo liqueur
  • 3 ml. hierbas secas liqueur
  • ½ sheet of gelatine

Other ingredients

  • 8 Pick One!

For the decoration

  • 4 sprigs of peppermint
