Fried Anchovies breaded in Quely Picada with garlic and parsley served with Green Bean and Strawberr



For the anchovies

Gut the anchovies and remove their heads, season them with salt and pepper, and add the drops of lemon juice and beer.

Coat them in the sieved mixture of flour and Quely Picada biscuit crumbs with garlic and parsley.

Fry them in the oil. Drain them on absorbent kitchen paper and set aside.

For the salad

Boil the runner beans in water and, when they are ready, cut them into thin strips and mix them with strips of strawberries.

Dress the result with oil, vinegar, chopped chives and salt.

Assembly of the dish

Arrange the fried anchovies on one side of the plate and on the other, the runner bean and strawberry salad.

Decorate with sprigs of parsley.

  • 1 kg. fresh anchovies
  • 100 g. flour
  • 100 g. Quely Picada biscuit crumbs with garlic and parsley
  • A few drops of lemon juice
  • A few drops of beer
  • Salt
  • White pepper
  • Sunflower oil for frying

For the salad

  • 4 runner beans
  • 2 strawberries
  • 1 dessert spoon of extra virgin Estancia de Son Pons olive oil
  • A drop of balsamic vinegar
  • 1 spring onion
  • Salt

For the decoration

  • Sprigs of parsley
